Creamy Sesame Dressing

I hesitate to call this a dressing because it is so much more!  The delicious flavors of sesame, ginger, and soy sauce pair well with so many foods.  Enjoy it drizzled on a veggie burger (try these amazing sliders!), as dip for cucumbers and peppers, or of course on your favorite salad.


1/2 cup raw cashews (soaked for 1-2 hours if you do not have a high speed blender)

1/4 cup rice wine vinegar

1 tbsp soy sauce (or tamari, for gluten free)

1 green onion, rough chopped

2 tsp sesame oil

1/2 tsp ground ginger

1 clove garlic

1-2 tbsp pure maple syrup

dash of sriarcha

salt/pepper to taste

1-2 tbsp of water to thin, if desired


Place all ingredients in a Vitamix or high speed blender.  Blend on high, adding more water if needed.
